Why I Love This Recipe

My mother always made these when we were kids at Christmas, it is her variation on a recipe she found in her old cookbook. They were always a big hit in our family. My grandmom made a variation of them also.


Ingredients You'll Need

1 cup sugar (can also use Splenda or Equal)
3 egg whites
1/8 tsp salt, 1 tsp vanilla


Directions

Preheat oven to 275.


In a glass bowl (works best, can use metal also -plastic won't work well)


Beat egg whites and salt until soft peaks form, slowly add sugar about a tbsp at a time until well blended and stiff peaks form, fold in vanilla. Drop by teaspoonfuls onto greased baking sheet (Spray).


Bake at 275 for about an hour until light golden brown, until tops are dry/no longer sticky, cookies should be crisp.


Variations: can use mint extract instead of vanilla, can use chocolate chips or other chips as mix ins.
