Crumb Mixture:
1/3 cup butter, softened
1/3 cup brown sugar
1 cup flour
Filling:
1 pkg. (8 oz.) cream cheese
1/4 cup sugar
1 large egg
1 tablespoon lemon juice
1/2 cup chopped red cherries
1/2 cup chopped green cherries
Directions
Combine all crumb mixture ingredients together. Beat at low speed, scraping bowl often, until well mixed, about 1 minute.
Reserve 1/2 cup, press remaining crumbs onto bottom of ungreased 8-inch square pan. Bake 10-12 minutes or until lightly browned.
Combine all filling ingredients together except cherries. Beat at low speed until smooth (1-2 min.) Stir in cherries by hand. Spread filling over crust. Sprinkle with remaining crumb mixture.
Bake 18-20 minutes or until filling is set. Cut into bars while warm, store in refrigerator. Freezes well.
