Why I Love This Recipe

Way back in the 80's, I developed this recipe based solely on the fact that anything named mesculine had to be good!...and it is.


Ingredients You'll Need

2 T olive oil
2 T butter
1/2 onion, julienned
1-2 garlic cloves - mashed and minced
3-4 mushrooms, slice thin
handful of snow peas - julienned
10-12 basil leaves - ripped
salt & pepper
pepper flakes
Fresh mint, if you have it - 2-3 small leaves, minced
handful of cherry tomatoes

1 pound mesculine mix or any baby greens


Directions

saute onions till they start to color


add everything else except greens


pierce the tomatoes with a knife point before putting in pan...so they don't burst in your mouth


When veggies are heated, add greens - toss to coat and mix...when all appear glossy, toss one more time and remove from heat - put in serving dish.
