Why I Love This Recipe

I learned this recipe when I was young and have raised my children on them. Now they fix it for their families and relatives. It's quick and easy and hand held. I make it in two different sizes with either a regular cupcake pan or a large cupcake pan. I can prepare it in 30 minutes!! And it is so universal that there are endless ways to add /change or top your bean cups, so it pleases everyone at the table.

Just so you know, I do have a patent on this recipe :)

Ingredients You'll Need

1 pound ground lean beef
2 cans of refried beans
1 package of taco seasoning
1 pound of grated cheese (Mexican or mild)
2 rolls of large biscuits (country style or regular)
½ cup of water
Large cupcake pan


Cook ground beef and drain

Add seasoning mix and ½ of water

Simmer until thick (that’s why only ½ of water)

Warm up refried beans on stove

Turn large cupcake pan upside down and kneed out the Biscuit dough over the crowns

Preheat oven to 375 degrees (depending on oven)

Place in oven till golden brown (around 10 min)

Flip the biscuit cups over and fill 1/3 refried beans 1/3 seasoned beef

Top off with your cheese

Notes: It usually only takes me 30 minutes from preparing to the plate. I’m a little plain so I just put hot sauce on top and eat away, but my kids go wild with toppings: salsa, tomatoes, olives, mix/ match anything Mexican, but you can pick up and eat just like a taco. or burrito.
