Why I Love This Recipe

My mother-in-law gave me the recipe that this is based on. As usual, I had to tweek it a little! My family loves this! Serve with a green salad and warm tortillas and you have a great family meal


Ingredients You'll Need

1 pound ground beef
1 med. onion, chopped
1 green bell pepper, chopped
1-2 jalapenos, chopped
2 cloves garlic, chopped
1 can tomatoes and green chillies
1 can cream of mushroom soup
1 large can Ranch Style beans
2cups of whole kernal corn, can or frozen
salt and pepper to taste
1-2 tsp cayenne pepper
1 tsp cumin
2 cups shredded medium cheddar cheese
1/2 bag of Doritos tortilla chips, crushed


Directions

Preheat oven to 350 degrees. In a skillet over med-high heat, brown the ground beef in about 2-3 tbsp olive oil. Drain. Saute' the onion, bell pepper, jalapeno pepper, and garlic in a little olive oil. Add the ground beef back into the skillet. Turn the heat down to medium. Add the remaining ingredients, except cheese and chips. Let come to a simmer. In a 9X13 casserole that has been lightly greased, place the chips and spread evenly. Carefully pour the meat mixture over the chips and sprinkle with the cheese. Place in oven and bake for about 30 minutes or until bubbly around the edges.
