Mexican all in one casserole

Why I Love This Recipe
This is an easy all in one casserole from our church potlucks. Having grown up with rice always being cooked in a rice cooker, I am still kind of weirded out by dishes that you put uncooked rice in and that come out tasting good!
Ingredients You'll Need
1 lb ground beef
1 T canola oil
2 T roasted garlic
1 t salt
1 large yellow onion, finely chopped
1 t chili powder
1 16oz can diced tomatoes
1 16oz can kidney beans
3/4 c uncooked short grain rice
1/4 c chopped olives
3/4 c finely shredded mexican blend cheese
Directions
brown meat, breaking up and keeping crumbly, remove meat
add onion and salt, caramelizing onion in beef fat
once onion caramelized, add garlic and chili powder, stirring thoroughly
dump ground beef back in and add tomatoes, kidney beans, and rice, mixing completely
Pour into 9x12 casserole dish and bake at 350 degrees for 45 minutes
Sprinkle cheese and olives on top and continue baking for another 15 minutes, or until cheese is melted
