Why I Love This Recipe

When it came down to recipes, really there were only 2 to consider. Unfortunately, I found that pretty much the only things we have yet to unpack from moving months ago is our cookbooks so of the two, the only one I could find was Grandma Moore's krumkake cookies (the other was Grandma Clark's banana cream pie). Both are staples of the Clark household for as long as I can remember. So much so that we "made" both grandma's cook them every holiday season. Grandma Clark said she would send us a pie from Arizona once she moved down there, but we didn't go that far.

The krumkake goes back to our Norwegian roots and was part of perhaps a dozen cookies grandma would make for Christmas. Not sure why this one stuck with us but am assuming because of its shape.....and the fact that it is yummy.

There are different variations to the recipe to add various flavors but I tend to like the original version. Just watch out.....we have our own krumkake iron to make them now that grandma has passed and if you're not careful, your fingertips will get a bit toasty. A nice ice bath is recommended nearby. Enjoy!


Ingredients You'll Need

1 egg
¾ cup sugar
1 cup whipping cream
3 tablespoons melted butter (measure after melting)
¼ teaspoon salt
1 ¾ cups flour
1 teaspoon almond flavoring


Directions

Beat egg, sugar and whipping cream with electric mixer.
Add butter, salt, and vanilla.
Gradually add flour.
Make sure krumkake iron is HOT!
Use approximately 1 teaspoon batter per cookie. Cook 15 seconds/side. Do not squeeze iron. Temperature varies with stoves: about med high - high. Good idea to have a bowl of ice water nearby just in case you burn your fingertips.
