Michelle Kumar's Plant-Based Sausage & Broccoli Pasta
Ingredients You'll Need
● Meat/ non-meat protein
● Spaghetti Pasta (8 oz)
● Broccoli
● Garlic (3-4 cloves)
● Olive oil
● Chili flakes
● Salt
● Pepper
● ¼ cup heavy cream
● 1 cup pasta water
● Parsley
● Parmesan cheese
Directions
1. Start a pot of boiling water and add a couple tablespoons of salt
2. Once the water is boiling add your pasta and cook it while cooking the rest of the
ingredients
3. Turn the burner off a couple of minutes before the pasta is al dente
4. Start preparing the ingredients (broccoli- chopped, garlic- thinly sliced, & protein diced
and or cubed)
5. Start with a couple tablespoons of olive oil into a pan
6. Add garlic and chilli flakes to infuse the oil- add your protein of choice
7. Once protein is cooked add pasta straight from the boiling pot into the pan
8. Use the pasta water to blanch broccoli
9. Save 1 cup pasta water
10. Add ¼ cup heavy cream
11. Mix well- add pasta water as needed for the desired consistency of sauce
12. Add broccoli, salt and pepper (mix well)
13. Take off burner and serve with parsley and parmesan cheese
