Ingredients You'll Need
1 cup kidney beans, cooked or canned
1 cup cannellini beans, cooked or canned
2 carrots, diced
2 celery stalks, diced
1 zucchini, diced
2 medium potatoes, peeled and cubed
1 can (14 oz) diced tomatoes
6 cups vegetable broth
1 cup small pasta (like ditalini)
3 cloves garlic, minced
1 tsp dried basil
1 tsp dried oregano
Salt and pepper to taste
2 tbsp olive oil
Directions
Heat olive oil in a large pot over medium heat.
Add carrot, celery, and garlic; sauté until softened.
Stir in potatoes, zucchini, beans, and tomatoes.
Pour in vegetable broth and add basil and oregano.
Bring to a boil, then reduce heat and simmer for 25 minutes.
Add pasta and cook until tender, 8-10 minutes.
Season with salt and pepper. Serve hot with grated Parmesan if desired.
