Mini Butterscotch Chip Cupcakes

Ingredients You'll Need
2 Cups all- purpose flour
2 Teaspoons baking powder
3 Large eggs
1/2 Cup mini butterscotch chips
1/4 Teaspoon salt
1 Cup margarine
1 Cup sugar
3/4 Cup milk
1 Teaspoon vanilla
Directions
Preheat oven to 350 degrees F. Spray mini muffin pan with nonstick spray. In a mixing bowl, add salt, baking powder and flour and combine. In another bowl, whisk margarine, vanilla and sugar until fluffy. Add in eggs and blend. Add milk and continue whisking. Mix in flour and mix before adding butterscotch chips. Fill muffin cups with batter. Bake 15-17 minutes. Cool and repeat baking until all batter is used.
