A cute little appetizer to eat before the main dish.
Ingredients You'll Need
12 cherry tomatoes, halved
12 small fresh mozzarella balls or pearl mozzarella
12 fresh basil leaves
6 slices of French baguette, cut into quarters (24 small bites)
2 tablespoons olive oil
1 tablespoon balsamic reduction
Salt and pepper to taste
24 cocktail sticks
Directions
Preheat oven to 375°F (190°C).
Brush the baguette slices with olive oil and toast them in the oven for 5 minutes or until lightly golden.
Arrange the components of the mini sandwich: take a cocktail stick, pierce through half a cherry tomato, then pierce through a basil leaf folded in half, followed by the mozzarella ball, and another basil leaf, and finish with another cherry tomato half.
Optionally, spread a little balsamic reduction or sprinkle salt and pepper on top of the assembled bites for extra seasoning.
Serve immediately or transfer the mini sandwich bites to a serving plate.
