1/3 cup granulated sugar
1/3 cup packed brown sugar
1 large egg
1/3 cup molasses
1 teaspoon vanilla extract
For Decoration:
Royal icing or powdered sugar glaze
Colored sprinkles or edible glitter
Mini alphabet sprinkles or edible markers
Directions
Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
In a medium bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt. Set aside.
In a large bowl, beat softened butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the egg, molasses, and vanilla extract until well combined.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
On a lightly floured surface, roll out the dough to about ¼-inch thickness. Use mini cookie cutters to cut out shapes.
Place cookies on prepared baking sheets and bake for 8-10 minutes, or until the edges are just beginning to brown.
Allow cookies to cool before decorating with royal icing or powdered sugar glaze. Use mini alphabet sprinkles or edible markers to write fun "news headlines" or messages.
