Ingredients You'll Need

48 small red potatoes
4 oz. cream cheese
1/3 c. sour cream
1/4 c. butter
2 garlic cloves
1/4 t. Salt
1/4 t. Pepper
6 oz. Crumbed Gorgonzola cheese
4 slices of bacon
1/4 c. grated Parmesan cheese
1 T. Minced Chives


Scrub potatoes; place in a dutch oven and cover with water. bring to a boil reduce heat cover and simmer for 10-12 minutes or until tender, drain

When cool enough to handle, cut thin slice from potato bottoms to level if necessary

In a large bowl, mash the pulp with cream cheese, sour cream, butter, garlic, salt, and pepper. Stir in Gorgonzola cheese and bacon. Spoon mixture into potato shells; sprinkle with Parmesan cheese.

Place in 2 ungreased 15-inch by 10-inch by 1-inch baking pans. Bake at 350F for 10 to 15 minutes or until heated through, Sprinkle with chives.
