Miniature American Cheesecakes

Why I Love This Recipe
An easy do-ahead dessert perfect for a party! These 24 mini cheesecakes are baked in muffin cups with a vanilla wafer for the crust. I like to keep a few of these in the freezer and top them with fresh fruit or pie filling just before serving. A family favorite that is both easy and elegant.
