Ingredients You'll Need
1 package of instant ramen noodles
1 tbsp of minced garlic or dried garlic
1 tbsp of basil paste
1 tbsp of ginger paste
1 scallion finely chopped
2 tbsp white miso paste (i use whatever miso i have on hand)
sriracha for taste
1 tbsp or as much as you can handle, korean chili paste
1 cup of sliced mushrooms (frozen or fresh)
1/2 cup of peas (frozen)
1 softly boiled egg, or poached (optional)
3 cups of water
Directions
In a medium sauce pan boil the 3 cups of water. Once water comes to a boil put on medium heat and stir in miso paste with chili past. Add vegetables, if vegetables are frozen let vegetables get tender. Once vegetables are tender and miso has become one with the water and chili paste, add ginger paste and basil paste. After all ingredients have merged into a broth taste and adjust spice to your preference.
In another sauce pan boil noodles, drain and add to the miso broth. You can put noodles directly into the broth But the starch released from the ramen noodles might cloud the broth.
Once all is yummy in flavor, ramen noodles are set in broth and egg is boiled or pouched, Take out your favorite bowl pour the miso spicy ramen soup and enjoy.
