Berries and Cream Margaritas
¼ cup sugar
½ teaspoon lemon peel
2 cups mixed berries (such as blueberries, raspberries, blackberries, and sliced strawberries)
½ teaspoon finely grated lemon peel
8 oz. heavy whipping cream
¼ cup sugar
Directions
In a cold bowl pour heavy whipping cream and whisk until soft peaks form. Slowly add sugar a little at a time. Whisk it in before adding more. Whisk all sugar and continue whisking until firm peaks form. Place in fridge until ready to use.
In a small sauce pan bring /4 cup sugar and water to a boil. Cook, stirring often until sugar dissolves, 3 to 5 minutes. Stir in lemon peel and let cool.
Place mixed berries until half full in a margarita glass.
Pour sugar mixture on top of berries.
Take out the whip cream from the fridge and spoon the desired amount on to the berries.
Garnish with some lemon zest.
