Why I Love This Recipe

Rojak- A delicacy in Malaysia and Singapore;which basically is a salad dish served in chilli base salad sauce.

My family will not miss this whenever we go back to Malaysia.

Ingredients You'll Need

1 small bangkuang,peeled
1 cucumber
1 small unripe papaya,peeled
1 unripe mango,peeled and pitted
1/4 pineapple
100g roasted peanuts,coarsely ground

Rojak sauce
3 large chillies,deseeded
2 teaspoon belachan ( dried shrimp paste ), roasted
5 teaspoons tarmarind juice
3 tablespoons hae ko ( fermented prawn sauce )
6 tablespoons sugar
** you can also buy the ready made rojak sauce from Asian supermarket.


Directions

1. Cut all fruits to bite size


2. To prepare the Rojak sauce,grind the chillies and belachan in a mortar. Add the tarmarind juice, hae ko and sugar, stir to mix well.


3. Toss the fruits, Rojak sauce and half the peanut in a mixinig bowl. Transfer to a serving dish and sprinkle the rest of the crushed peanut over it. Serve immediately.
