Why I Love This Recipe

I treat our family to desserts on the weekends, so I am always looking for ways to please the family with the current treat. Mocha Truffle Bars are a pleaser.

Ingredients You'll Need

For the crust:
3 c. crushed GF chocolate cookie crumbs
5 T. melted butter
For the Mocha Truffle layer:
4 oz. unsweetened chocolate and 4 oz. semi sweet chocolate (or use all unsweetened chocolate to make a less sweet dessert)
2 sticks butter
1 t. vanilla
4 c. confectioner's sugar
1/4 c. heavy cream
1/3 c. strong coffee\
For the Ganache Topping:
1 c. semisweet chocolate chips
1 c. heavy cream


Make the crust by combining the cookie crumbs with the melted butter. Spread and press down in bottom of a 9"X9" pan lined with parchment paper. Put in fridge. Make the Mocha Truffle layer by first melting chocolate by putting in a plastic bag and microwave for 2 minutes at 50% power, continue to microwave in 30 second intervals at 50% power until chocolate is melted and smooth, set aside. In the bowl of a mixer, cream butter with vanilla; slowly add confectioner's sugar and beat well. Add chocolate, coffee, and heavy cream. Beat well starting on slow speed gradually increasing speed. Spread Mocha Truffle layer on chocolate crumb layer and put back in fridge. Make Ganache by combining chocolate chips and heavy cream in a bowl. Microwave for 2 minutes at 50% power, stir, continue microwaving in 30 second intervals at 50% power until chocolate is smooth and melted. Stir well. Pour onto Mocha Truffle layer and smooth evenly. Refrigerate truffle bars for at least 2 hours before slicing and serving.
