Mom's Carrot Casserole

This is dish gets requested for every family holiday! We end up doubling or sometimes tripling the recipe to ensure everyone gets leftovers also.
Tip: This dish is easy to prep the night before and just bake it right before serving.

Ingredients You'll Need
2 pounds carrots, sliced
1/2 cup stick butter, divided
6 ounces American cheese, shredded
1/4 teaspoon dill weed
1/2 cup saltine crackers, crushed (about 15 crackers)
Directions
Preheat over to 350 degrees.
Boil carrots until tender.
Place carrots in a greased 1.5 quart casserole dish.
Melt 1/4 cup of butter and cheese in a saucepan.
Add dill weed to cheese mixture.
Pour cheese mixture over carrots and stir lightly.
In a seperate bowl, toss crackers and remaining melted butter to make a crunchy topping.
Sprinkle cracker mixture over carrots.
Bake for 25-30 minutes.
