Mom's Peanut-Butter Delights (No Bake Cookies)

This is my mom’s take on the classic no-bake cookie and I still love when she makes them to this day. This recipe makes a ton of cookies for sharing with family and friends and has become one of my go-to recipes for parties and potlucks, and no one can ever have just one!

Ingredients You'll Need
4 cups granulated sugar
1/3 cup cocoa powder
1/4 tsp salt
1 cup creamy peanut butter
½ lb. butter
2 tsp vanilla extract (imitation is fine)
1 cup milk
4 cups quick oats
*optional – add 1 cup chopped coconut
Directions
Mix the sugar, cocoa, milk, salt and butter in a large pot.
Bring the contents of the pot to a full boil, and let heavily boil for 1 minute.
Remove the mixture from heat and add the peanut butter, vanilla extract and the quick oats into the pot. Also add the chopped coconut if desired.
Mix all of the ingredients together in the pot
Let cool for approximately 5-10 minutes, until the mixture is still liquid but cool enough to handle
Spoon clumps of the mixture using about 2 tbsp per cookie onto wax paper, or another non-stick surface. You may need to use another spoon or a finger in order to remove the mixture since it is very gooey.
Let the cookies cool until firm, then enjoy!
