Mom's Spicy Fish Soup

Why I Love This Recipe
This is an easy soup that my mom made for us when we were sick with a cold and with 9 kids around the house, it was "on the menu" a lot. Packed with protein from the fish, vitamins from the vegetables and lime and to clean our sinus the heat of the chipotle(she said.The avocado gives it a special creaminess . This soup taste like heaven even when you are not sick. Mom died when I was only 9 years old but I can still taste her flavors every time I make this recipe. Now my own family gets it when they are sick or in a cold winter day.
Ingredients You'll Need
Ingredients:
2 lbs. Haddock, Flounder or Cod Fillet of fish
1 Tbs. Canola oil
2 Large ripe tomatoes
1 Large white onion
1 Large zucchini squash
2 Garlic clove
1 tsp Garlic powder
1 Ripe avocado
2 Tbs Chipotle in adobo (optional)
1 large lime
3-4 cups of water
Salt and pepper to taste
Directions
Season fish with salt, pepper and garlic powder.
Using a dutch oven pot (or similar) heat oil on medium high, When oil is hot add the fillets,let it cook for 2 minutes.
Cut tomatoes and zucchini in big pieces, slice the onion and chop the garlic, add to the pot. Add salt and pepper to the vegetables and cook for 2-3 minutes,
Add water, turn to medium heat and after 5 minutes turn the soup on low,
Cook for another 15-20 minutes, making sure the flavors are well blended.
Serve hot and garnish with chipotle pepper, avocado slices and 1/4 of the juice of a lime. Enjoy!
