Mom's Tamale Pie

"This recipe is unique. It's a sidedish that resembles corn bread on the outside, but it defiitely is not bread. Rather, it's a creamy & cheesy type of souffle filled with corn and a little spice. ."

Mom used to make this when we were growing up. The smell of it cooking with green chili throughout was wonderful. After Mom passed, I dug into her old weathered recipe tin and saved her recipe. It's not in my tin. Mom made several hand written copied so she would never be without one!
Ingredients You'll Need
1 can of cream corn
3/4 cup of yellow corn meal
1/4 cup of vegetable oil
1 teaspoon salt
1 teaspoon baking powder
1 cup of regular milk or evaporated milk
1 cup of shredded cheddar cheese or more to your liking
1 small can of diced green chili or more to your liking
Directions
Mix all together and pour into a 8 x 8 in. square pan that has been lightly sprayed with oil. Cook for an hour at 350*. If you like your pie firmer, cook longer.
Pairs Well With
This an excellent dish to be served with anything. It's not a bread. It's a side dish that will set up firmly after cooling.
