More Mac & Cheese Please!
Why I Love This Recipe
To me nothing spells cold winter days better than MAC & CHEESE!!! I love this comfort food, especially when teamed with Tomato Soup and maybe a good grilled cheese sandwich (more on this later)
Ingredients You'll Need
1 cup of whole Milk
1 cup Cheddar cheese grated
1 cup of any other cheese you have in the fridge chopped small or diced so it melts into the sauce; parmesan, gouda, gruyere, gorgonzola, you name it.
1/4 tsp Nutmeg grated
1/2 cup Heavy Cream (if you have)
4 tablespoons of Butter
1 Tablespoon Flour
Salt & Pepper
Pinch of Cayenne Pepper
Melt butter in a pot on a low flame. Add flour and blend.
Add 1/2 of the milk and create a "roux" (basically thicken the butter/milk with flour to create the base of the sauce.)
Once thickened, add remaining milk and heavy cream and cheeses and cook through.
Add macaroni and pour into a greased casserole dish.
Dot the top with butter and breadcrumbs (or for fun, potato chips or Durkee fried onions) and cook at 350 for about 15 minutes till browned on the top.
Dig in! If you have leftover broccoli or bacon, you can also add to this dish!
