Moroccan Lentil and Carrot Soup

Why I Love This Recipe

Ingredients You'll Need

6 cups water
2 cups lentils rinsed
2 vegetable bouillon cubes
6 carrots diced
6 roma tomatoes diced
1 large onion chopped
4 garlic cloves minced
dash of olive oil
1 teaspoon curry
1 teaspoon paprika
1 teaspoon cinnamon
salt and pepper to taste
cilantro to garnish


In large pot sauté in oil onion and garlic.

Add carrots and continue to sauté until carrots are soft then mix in all spices.

Add tomato puree and continue to sauté till blended well.

Add broth and lentils and cook for about 1/2 hour.

Add salt and pepper and garnish with cilantro.
