Why I Love This Recipe

This authentic way to make Pollo Fricassee in Puerto Rico is a fall-off-the-bone hit. You can either make in on the stove or in your slow cooker. It is delicious and very easy to make! Serve with white rice and a nice salad. This recipe is great for those in braces, just ensure that you remove the meat from the bones with a fork, NOT your teeth. This recipe tastes even better when you prepare the night before; just take it out of the refrigerator the next morning set it to cook."

Ingredients You'll Need

1 Lb. Chicken Drumsticks
1 Tbsp. Adobo Seasoning
1/2 (.18 ounce) Packet Sazon Seasoning
1/2 Tsp. Salt
5 Large Red Potatoes (peeled and thickly sliced)
3 Large Carrots (peeled and cut into rounds)
1 Large Red Bell Pepper (seeded, cored, and chopped)
1 Large Onion (chopped)
5 Cloves of Garlic (minced)
1 Bunch Fresh Cilantro (chopped)
2 Tbsp. EVOO (extra virgin olive oil)
1/2 Cup Dry Red Wine
1 Tsp. Ground Cumin
1 Tsp. Dried Oregano
2 Fresh/Dried Bay Leaves


Wash Chicken and pat dry; Place into a bowl. Season with Adobo seasoning, Sazon seasoning, and salt. Place legs into a slow cooker, and cover with potato and carrot slices.

Puree the red pepper, green pepper, onion, garlic, cilantro, EVOO, wine, cumin and oregano in a blender. Pour over the chicken and add whole bay leaves.

Cook on Low for 6-8 hours, until the chicken is easily removed form the bone.

Pairs Well With

Serve with White Rice and Yellow Plantains
