Mrs. P's Banana Pudding

Why I Love This Recipe
I grew up on this recipe which was handed down from my Grandmother. Cayla had never had homemade banana pudding until she came to live with us. I made this for her and she was instantly hooked. I taught her how to make it and told her to 'guard' my family secret which I am proud share with you.
It is wonderful and brings back precious memories. I am honored that she can pass it along to her family one day. All my kids LOVE it and it is usually a holiday staple.

Ingredients You'll Need
1 to 1 1/2 bags of JACKSONS Vanilla Wafers ( these are pretty much limited to the South, but are THE BEST! Use which ever vanilla wafers you like best)
3 or so bananas depending on how many you want in the pudding
2/3 cup sugar
6 TB Flour
½ tsp salt
3 Cups whole milk
3 slightly beaten egg yolks.
1 TB butter
1 ½ tsp vanilla flavoring
Directions
Mix in medium sized saucepan:
2/3 cup sugar
6 TB Flour
½ tsp salt
Stir in :
3 Cups whole milk
Cook over Medium heat. Stir constantly until it begins to thicken. ( use a whisk.. that works best!)
Boil one minute or so. Pour some of the hot mixture into your egg yolks and mix well. ( this keeps your eggs form 'cooking' when you add them to the hot mixture) Gradually stir in 3 slightly beaten egg yolks. Continue cooking until thick. You have got to keep stirring or it will stick and scorch the pan and the pudding.
Turn off heat under pan.
Add 1 TB butter
1 ½ tsp vanilla flavoring
Stir until butter melted and well blended.
Cover bottom of bowl with cookies. ( use a clear bowl.. it makes it look pretty..) Cut up bananas on top of those. Add pudding to this, then alternate cookies, bananas and pudding with pudding on top.
I push cookies around the side of the bowl and crumble a few on top. Do not cover until its cooled. You can put it in the fridge AFTER it is cooled if you want to, it will “crack” when it gets cold…
Make sure bananas are all covered or they will turn dark quick.
