Ingredients You'll Need
1 oz Butter
12 oz Mirepoix
2 Tbsp Flour
2 tsp curry powder
1 qt. chicken stock
3 1/2oz cooked and diced chicken meat
1 oz diced green apple
1 oz sliced mushrooms
4 fl. oz warm milk
Salt & Pepper to taste
Fresh Chives for Garnish
Directions
In a saucepan add butter until melted
Add mirepoix and cook until tender (season with salt and pepper to taste)
Add flour and curry powder
Stir constantly to ensure it does not stick and cook flour until "blond" color.
Add chicken stock and simmer for 15 min
Add cooked chicken, diced apple, and sliced mushrooms, and cook for another 15 min
Finish off with milk, salt and pepper
Garnish with chives and enjoy!
