Ingredients You'll Need
2 cups cooked rice (choose any variety, such as jasmine or brown)
1 tablespoon olive oil
1 tablespoon butter
2 cups assorted mushrooms (button, shiitake, cremini), cleaned and sliced
1 small onion, finely chopped
2 cloves garlic, minced
1 teaspoon thyme, dried
1/4 cup vegetable or chicken broth
Salt and pepper to taste
Fresh parsley, chopped, for garnish
Directions
Heat the olive oil and butter together in a large skillet over medium heat.
Add the chopped onions and minced garlic to the skillet and sauté until the onions become translucent, about 5 minutes.
Add the mushrooms and sprinkle with thyme. Stir occasionally and cook until the mushrooms release their moisture and begin to brown, about 8–10 minutes.
Season with salt and pepper, then add the broth to the skillet. Let this cook for about 2 minutes, allowing the broth to reduce slightly.
Lower the heat and fold in the cooked rice. Mix well, ensuring the mushrooms and rice are evenly combined and heated through.
Before serving, garnish with chopped parsley.
