2 lb. fresh mushrooms
2 (7 oz.) cans artichokes
1 c. vinegar
1/2 c. oil
1 garlic clove, chopped
1 Tbsp. salt
1/2 tsp. pepper
1/2 tsp. thyme
1/2 tsp. oregano
1 Tbsp. parsley flakes
1 onion, sliced
Directions
Drain artichokes. Wash and drain mushrooms. Combine
vinegar, oil, garlic, salt, pepper, thyme, oregano, parsley and
onion. Mix well. Add mushrooms and artichokes. Marinate
overnight.
