Mussels in Zucchini Basil Broth

Ingredients You'll Need
1 lb zucchini
3/4 cup basil leaves
1 medium shallot
2 garlic cloves
1 cup water
1/2 cup dry white wine
3/4 t salt
1/4 t pepper
1/3 cup olive oil
4 lb mussels
Directions
Puree zucchini, basil, shallot, garlic, water, wine, salt, pepper and olive oil until smooth. Transfer purée to a large pot; add mussels. Bring to a simmer; cover and cook until mussels just open, 5 - 8 minutes.
