2 tbsp white vinegar
1 tbsp sugar
3 tbsp Dijon mustard
1 tsp dry mustard
1/3 cup vegetable oil
4 salmon fillets
3 tsp dried dill
salt and pepper to taste
1 cup bread crumbs


Mix together vinegar, sugar, dijon mustard and dry mustard with wire wisk. Add vegetable oil whipping vigorously with wisk until well blended. Preheat oven to 375F.

In a lightly-greased baking dish, place fillets skin side down. Season with salt, pepper and dill. Combine 3/4 of the mustard mixture with the bread crumbs and cover each fillet. Bake 15-18 mins, or until baked through and crust is crisp and golden. Top with remaining mustard sauce
