Why I Love This Recipe

This is my mother's recipe and it is friggin delicious. These lemon bars are sweet and lemony, but not at all tart. Think more like lemon candy than lemon custard.

Ingredients You'll Need

1/2 Cup of Butter @ room temp.
1 Cup AP Flour
1/4 Cup Powdered Sugar
2 eggs, slightly beaten
2 TBSP Lemon Juice, freshly Squoze
1 Cup Granulated Sugar
2 TBSP AP Flour
1/2 tsp Baking Powder

Blend the three ingredients with a pastry whisk.

Form into a loose ball and press it into a slightly greased 9 inch glass pan.

Bake 15 minutes @ 350 and DO NOT OVERBAKE IT.

Combine the eggs and lemon juice.

Sift sugar, flour, and baking powder together in a separate bowl and stir into the lemon mixture slowly.

Pour over warm (not hot) crust.

Bake for 25 minutes at 350.

Dust with powdered sugar.

Let cool completely before cutting.

Cover LIGHTLY if there's any left.
