My Mom’s (aka GrandMollie’s) Breakfast Casserole

Why I Love This Recipe
I am super traditional!! I make my Mom’s (aka GrandMollie’s) breakfast casserole EVERY Christmas morning!! It’s nice because you can make it ahead of time, refrigerate, & just throw it in the oven Christmas morning. It can cook & smell up the house while everyone opens gifts! I also serve it with fruit salad (which I will send the recipe for), store bought cream cheese Danish or something sweet, & Poinsettia mimosas (champagne & cranberry juice). Pace picante is a must for this southwest style dish & you can use regular breakfast sausage instead of sage.

Ingredients You'll Need
1 pkg. sage breakfast sausage
2 tomatoes
1 large can diced green chilies
5 eggs
1 cup milk
1 cup Bisquick
1 pkg. shredded cheddar cheese
Directions
Brown sausage into small crumbles and set aside.
Chop tomatoes and place in bottom of baking dish. Spread green chilies on top of tomatoes.
Beat 5 eggs and mix together with 1 cup milk and 1 cup Bisquick.
Spread sausage over tomato/chilies mixture and spread grated cheddar cheese over the top.
Pour milk/egg mixture over cheese, spreading evenly.
Bake at 375 F until brown & bubbly.
Can be prepared the day before and refrigerated until ready to cook. Makes a nice holiday brunch.
