NANCY'S FRUITCAKE 2005

Why I Love This Recipe
For a number of years I have been trying to come up with a fruit cake that the whole family would enjoy. Most of us do not care for the usual fruit that goes in most fruit cakes. So when even the children in the family ate this one I knew we had a winner for our family.
Ingredients You'll Need
1 cup salted butter
2 1/2 cups brown sugar
4 eggs
3 3/4 cups flour
2 1/2 tsp. baking powder
1/2 tsp. soda
1 tsp. salt
3 tsp. cinnamon
1 tsp nutmeg
1/4 tsp cloves
1/2 - 6 oz bag Tropical Pineapple diced (used Mariani)
1- 6oz.bag dried cherries (used Mariani)
1-6 oz. bag Craisins, cherry flavor(used Ocean Spray)
1 box (2 1/2 cups) golden raisins (used Sun-Maid)
1- 6oz bag Craisins, dried cranberries (used Ocean Spray)
1 cup chopped dates ( used Dole)
2 1/2 cups Pecans
3/4 cup of Dole pineapple juice
1/2 cup Cherry Liqueur ( used Heering
Directions
Cream butter and sugar, add eggs and beat well. Sift dry ingredients together in very large bowl. Stir fruits and nuts into flour mixture. Stir dry ingredients in alternatly with liquid into batter mixture. Pour into 3- greased and floured 8in x3 7/8in x 2 15/32in foil loaf pans . Top with pecan halfs and marachino for decoration. Brush the pecans with glaze.
Bake at 275 for about 2 hours.
Glaze-
1/3 cup white corn syrup mixed with 3 tablespoons pineapple juice. Microwave until bubbly. Brush over cake when cake is cool.
