Nachos Bianca

Why I Love This Recipe
I went to a restaurant with some friends in Columbia, MO and we had this as an appetizer. It was so good, I had to come back and duplicate it. This is in my new cookbook, "Welcome to Elle's Kitchen" by Elle Tillery. Available at amazon.com. I hope you enjoy it!
Ingredients You'll Need
Baked wonton chips
Cut into wedges
Preheat oven to 350 degrees. Spray your cookie sheet, place wonton wrappers on sheet in a single layer. Bake for 4 minutes, turn wontons over spray with cooking spray, and bake another 4 to 6 minutes. Cool on a wire rack.
Asiago Cheese Sauce
¼ cup all-purpose flour
2 cups 1% low fat milk
1 cup (4oz) grated Asiago cheese
Directions
Place flour in a medium, heavy saucepan, gradually add milk stirring with whisk until blended. Place over medium heat; cook until thick stirring constantly. Remove from heat; add cheese, stirring until melted.
This recipe is very versatile. You can make it part of a nacho bar. Have cooked chorizo, sweet Italian sausage, cooked diced chicken, black olives, banana pepper rings, black beans, diced tomatoes, or any toppings you like. You can keep the cheese sauce warm in a crock pot. Have the wonton chips in a bowl at the beginning of the nacho bar.
