Why I Love This Recipe

The recipe for Nanas Goreng is similar to pisang goreng (Indonesian fried bananas ), so if you have people over dinner we would recommend you make both.....Selamat makan!


Ingredients You'll Need

12 fresh pineapple rings
1/2 cup rice flour*
1 cup all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 tablespoon brown sugar
1 large egg, lightly beaten
1 cup thick coconut milk
1 cup water
oil for deep frying

*Can be purchased at your local Asian food market.


Directions

Using an electric mixer, beat the rice flour, all purpose flour, baking powder, salt, brown sugar, egg, coconut milk and water.


Let stand for about 25 minutes.


Heat the oil to the smoking point, then reduce heat slightly.


Dip the pineapple rings one by one into the batter, then slide in the oil. (Don't fry more than three at a time).


Cook until golden, turning once or twice.


Lift out on a slotted spoon and drain.


Serve while hot with coconut ice cream.
