Making authentic Neapolitan pizza dough is easier than you think. This simple recipe will give you soft, airy dough perfect for your wood-fired oven.


Ingredients You'll Need

11lbs Italian Flour “00” (like Caputo 00 or Molini Pizzuti)
3.25 quarts of cold water (55°F)
½ oz of Fresh Yeast
5 oz of Salt


Directions

Pour the water into a dough mixer.


Add the yeast to the water and stir until it dissolves.


Start the Dough Mixer.


Gradually add the flour


Put in about 80% of the flour within the first 2 minutes of mixing.


Add the salt once most of the flour is in.


Keep mixing for about 15 to 20 minutes until the dough is smooth and elastic.
