Why I Love This Recipe


Ingredients You'll Need

1-3/4 cup vanilla wafer crumbs
1/4 cup butter, melted
2 teaspoons sugar
4 pkgs. (8 oz. each) regular cream cheese (no substitutions), room
temperature
2 cups regular sour cream (no substitutions)
2 tablespoons cornstarch
1-1/2 cups granulated sugar
6 eggs
1 tablespoon vanilla
grated rind of one lemon
grated rind of one orange
1 tablespoon lemon juice. optional


Directions

Mix wafer crumbs, granulated sugar, and melted butter. Pat onto bottom and part way up sides of a 9 or 10-inch springform pan . Bake at 325ºF for 8 to 10 minutes and set aside to cool. Beat cream cheese until smooth at low speed of mixer. Gradually add sugar, a little at a time and beat at low speed till fluffy. Add cornstarch. Add eggs one at a time, beating lightly after each addition. Blend in sour cream, lemon juice (if using), lemon and orange rinds, and vanilla. Mix on low speed until smooth. Don't overbeat. Scrape down sides of bowl frequently. Pour into prepared pan and bake in a preheated 350ºF oven for 1 hour and 5 minutes to 1 hour and 15 minutes. Shake pan lightly. Cheesecake is done when light brown on top and batter is set at edges but still wobbly in center.
