A family favorite when my second daughter was born in Wellington.
Ingredients You'll Need
1 small pumpkin
2 large potatoes
2 small oonions
1 clove of garlic minced
1 T. of butter or oil.
2 c. of stock
nutmeg
salt
pepper
grated cheese

New Zealand Pumpkin Soup
Cook (stam/boil) 1 small pumpkin (peeled and diced) and 2 large potatoes(peeled and diced.) Saute 2 small oonions, diced and 1 clove of garlic minced in 1 T. of butter or oil. Combine veggies with 2 c. of milk. Blend unitl smooth. Add 2 c. of stock. Season with nutmeg and salt & pepper. Serve hot with grated cheese on top.
