Nonna's Tomato Sauce

This recipe feels, smells and tastes like home. It is the core of most of my family's meals in Italy and has been passed down from generation to generation. I remember being five years old, standing on a stool and my nonna (grandma) teaching me to stir her tomato sauce with a wooden spoon. It's really simple, easy and extremely comforting.
I'm currently working from home as per the UK government's instructions so having a yummy tomato sauce that is versatile and reminds me of those I love is comforting as well as helpful as a base for creative dishes. It's not resource intensive and makes the house smell divine.
Ingredients You'll Need
1 tablespoon of olive oil
1/2 onion
500g passata
2 tablespoons of milk
Salt to taste
Directions
Chop the onion finely and fry gently in a frying pan.
One the onion is translucent add the passata, the two tablespoons of milk and a pinch of salt.
Bring to the boil and then reduce heat so it is simmering gently.
Cover pan with a lid and leave to simmer for a minimum of 30 minutes. The longer the more intense the flavour.
Pairs Well With
This is a base tomato sauce. You can use it to dress pasta, to make lasagne or pizza. I have used it as a base for cheese on toast and instead of ketchup. I have even been known on very lazy days to eat it with a spoon!
