Norma's Double Breaded Pork Chops - Family Favorite

"Whenever friends came to visit or sleepover my Mom always made her doublebreaded pork chops, I miss them so because my husband doesn't like pork!"

Once you taste this version of breaded pork chops there is no going back to using bread crumbs!
Ingredients You'll Need
6 thick bone-in or boneless pork chops or one per person
2-3 cups saltine crackers crushed in bag with rolling pin
2 eggs beaten
Canola oil for frying
Directions
Dry pork chops and season with salt and pepper
Dip each pork chop in egg, then dip in crushed saltines
Re-dip in egg and re-coat with crushed saltines
Fry in large heavy pan in 1/2 inch oil until browned nicely on each side
Two methods to continue to cook, you can continue to fry for 30 minutes or longer until internal temperature reaches 145 degrees
Or remove the browned chops to a baking sheet and put in oven at 350 to continue cooking
