Oklahomie Fish Tacos

Amazing fish tacos that will make you think you're on a beach vacation. These tacos have pretty much become a weekly staple at my house, with good reason. This is a go-to recipe when you don't have a lot of time or want entertain on the patio.

Ingredients You'll Need
Tacos
- 4 fish fillets (I like using cod, but mahi-mahi or catfish works well)
- 8 white corn tortillas
- 1/2 large lime
- Paprika
- 1/4 butter (melted)
- Salt & Pepper
- 1/4 teaspoon Cayenne
- 1 teaspoon garlic powder
Sauce
- 1/2 cup mayo
- 1/2 cup sour cream
- 1 teaspoon sea salt
- 2 chipotle peppers in adobo
- Juice from other half of lime
- 1 clove garlic (teaspoon of minced garlic)
-Cilantro
-Queso Fresco
-Taco Sauce (Something like Valentina or El Yucateco)
-Shredded cabbage
-Avocado or guacamole
Directions
For Sauce:
-Finely chop chipotle peppers and add to mixing bowl
-Add remaining ingredients and mix thoroughly.
-Cover and refrigerate
For Fish:
-Preheat grill to medium-high heat and lightly oil grates
-Mix paprika, salt & pepper, cayenne, and garlic powder in small bowl
-Prep fillets by brushing with melted butter and seasoning with mixture. Finish by squeezing lime juice over fillets
-Grill 3-4 minutes per side until flaky
-Let fish rest for a few minutes before cutting into pieces
-While fish is resting, warm tortillas on grill
Assemble:
- Top tortillas with fish and any desired toppings; finish with chipotle sauce.
