Made with peanuts, as well as peanut butter, these cookies bake into tall,

gently crunchy mounds

Ingredients You'll Need

1/2 cup unsalted butter
1/2 cup peanut butter, crunchy or creamy
1 cup brown sugar
2 tsp baking powder
2 tsp vanilla
1/2 tsp salt
2 large eggs
2 cups flour
1 cup salted peanuts, ground


Preheat the oven to 350 F

Lightly grease (or line with parchment) two baking sheets

In a large bowl, cream the together the butter, peanut butter, sugar, baking powder, vanilla, and salt

Beat in the eggs

Stir in the flour and peanuts

Drop the dough by the tablespoonfuls onto the prepared baking sheets

Bake the cookies for 12 minutes or until they are set and lightly browned

Remove them from the oven

Transfer to a rack to cool
