Olive Garden Minestrone Soup Clone

Ingredients You'll Need
1/4 cup Olive Oil
1 small Sweet Onion, Diced
2 Celery, Diced
1 tsp Garlic Clove, Minced
2 can Swanson Veggie Broth
1 can White Or Great Northern Beans
1 can Navy Beans
1 can Light Red Kidney Beans
1 large Petite Diced Tomatoes
1 can Tomato Sauce
1/2 cup Raw Carrots, Diced
1 -2 Zucchini, Sliced
1 1/2 tsp Italian Seasoning
Salt & Pepper To Taste
3 cup Raw Spinach, Or Small Pkg Frozen, thawed
1 cup Uncooked Elbow Macaroni, or Pasta of Choice
Directions
*Sauté in large pot olive oil, onion, celery, and garlic until onions are transparent
*Add to the pot the rest of the ingredients, except the spinach and pasta
*Cook about 30 minutes and add spinach and pasta
*Serve with parmesan cheese, if desired
