One Pot Turkey Stroganoff

Why I Love This Recipe

Now you can make everyone’s favorite stroganoff in one with turkey! Comforting, no-fuss, budget-friendly and quick clean up! Serve this with a side of your favorite green vegetable such as steamed broccoli, green beans, peas.

Ingredients You'll Need

2 tbsp butter
1 small onion, finely chopped
2 garlic cloves, minced/pressed
1 lb. ground turkey
8oz cremini or white mushrooms, thinly sliced
2 tbsp flour
2 cups of chicken broth*
8oz egg noodles (*226 grams, if using 340 grams package, use 3 cups of broth)
1/3 cup sour cream
Salt & pepper to taste
Parsley, finely chopped (optional)


Directions

In a pot with a lid (such as a Dutch oven) melt 2 tbsp of butter, and sauté one small onion (finely chopped) on medium heat until onion is translucent. Add two minced garlic cloves, stirring and cooking for an additional minute.


Add 1 lb. of ground turkey and cook until turkey starts to brown.


Next add thinly sliced mushrooms, 1 tsp salt and 1tsp pepper, and sauté until most of the liquid has been absorbed.


Add in in 2 tbsp of all purpose flour. Stir to coat the mixture and cook for 2 minutes ensuring there are no clumps of flour that may not be cooked.


Add in 2 cups of chicken stock followed by uncooked noodles of choice. (*if using more than 8oz of noodles, increase the broth amount. I often use approximately 12oz (340 grams) of noodles and therefore approximately 3 cups of broth). The stock should just cover the mixture.


Stir, cover the lid and bring to a boil.


Once boiling, turn down the heat to a simmer. Periodically stir the pot until noodles are fully cooked and make sure noodles are not sticking to the bottom. If you find that the stock has mostly evaporated and your noodles are not cooked yet, add a bit more broth.


Turn off the heat and season to taste. Stir in 1/3 cup of sour cream and chopped parsley (optional).
