3 medium potatoes, peeled and diced
1 cup cauliflower florets
1 cup broccoli florets
1 cup mushrooms, sliced
1 small onion, thinly sliced
3 cloves garlic, minced
2 tablespoons olive oil
Salt and pepper, to taste
1/2 teaspoon smoked paprika (optional)
1 teaspoon fresh thyme leaves or 1/2 teaspoon dried thyme (optional)
1 cup shredded cheddar cheese
Directions
Heat olive oil in a large skillet over medium heat. Add diced potatoes and cook, stirring occasionally, for about 10 minutes until they start to soften and brown.
Add the sliced onion and garlic; sauté for 2-3 minutes until fragrant and translucent.
Stir in cauliflower, broccoli, and mushrooms. Season with salt, pepper, smoked paprika, and thyme. Cook, stirring occasionally, for about 8-10 minutes until all veggies are tender.
Sprinkle shredded cheddar cheese evenly over the top. Cover the skillet with a lid and cook for 2-3 minutes until cheese is melted and bubbly.
