I love this breakfast option because it gives me the right amounts of protein, carbs, and fat. Additionally, 'dat green stuff takes this over the top!

Butter (oil is fine also)
Directions
Mash the avocado to your liking. Add Salt and Pepper to taste. It's a spread for your bread (no rappin' intended), so making restaurant-style guacamole isn't necessary but I'll leave that up to you. Set aside.
Cook bacon any way you like: in the oven or on the stove top. Plate it when done. You can stack the bacon on top, or leave it out altogether.
Toast bread. We use Ezekiel 4:9 Sprouted Whole Grain Bread for more fiber and protein, but you can use your favorite bread, I will not judge. We enjoy toasting the bread on cast iron skillet with a small amount of butter, but a toaster will work as well. Maybe you do not like toasted bread, and that's ok just skip the toasting step.
Cook egg over easy in a teaspoon of butter or oil. If you're like me, use a little bit of the leftover bacon grease as it gives your eggs more flavor.
Time to stack your open-face egg sammich! Spread avocado on the toasted bread, add sliced tomatoes, salt, pepper, egg and garnish with shredded cheese.
