3 eggs
1 cup sugar

½ cup olive oil
4 tbsp cocoa powder
1 cup all purpose flour
¼ tsp baking powder
2 tbsp orange zest, finely chopped
Topping:
2 tbsp orange zest, finely chopped

Directions
Preheat oven to 175C.
Melt dark chocolate in a heatproof bowl over boiling water and put it aside. Let it reach at room temperature.
Beat eggs and sugar well until creamy, for about 5 minutes.
Pour in orange juice and olive oil.
Add in cocoa powder and mix with a spatula.
Sift flour into it, but don’t add all of it at one time. Add it gradually and mix.
Add in baking powder and orange zest and mix a little.
Add in melted chocolate and mix.
Line a rectangular baking pan (30cmx17cm) with parchment paper and pour the mixture in it.
Sprinkle chopped orange zest on the batter.
Bake for 35 minutes and take it out of oven when it’s still moist.
Let it cold and sift cocoa powder after slicing and then serve.
