Why I Love This Recipe

These cookies are a very light and delicious snack that will satisfy your cookie craving.


Ingredients You'll Need

2 sticks unsalted butter at room temp.
2/3 cup sugar
Pinch of salt
1 teaspoon orange extract
2 cups all-purpose flour
1/2 cup chopped walnuts


Directions

In a large bowl, combine the butter, sugar, salt and vanilla. Using an electric mixer, beat the mixture on medium speed until it is smooth. Add the flour and nuts. Continue mixing until the dough resembles small pebbles.


Place dough on a piece of plastic wrap and form into a 10 x 2 inch log. Refrigirate for about 2 hours or until firm.


Preheat oven to 350 degrees. Cut dough into 1/4 inch slices and place on a foil lined cookie sheet about an inch apart. Bake for 12 to 14 minutes or until the edges are brown. Cool on a baking rack.

I made these cookies yesterday. I had already softened the butter when I discovered someone had eaten my walnuts, so I substituted some almonds, and instead of orange flavor, used almond extract. They came out great, like a fancy shortbread! Thanks for this versatile recipe!!
