Why I Love This Recipe
I used to love when my mom made this for me as a kid! This recipe is super easy especially if you have a meat thermometer.
Ingredients You'll Need
1 beaten egg
3 tablespoons of milk
1/2 cup of finely crushed ritz crackers
1/2 teaspoon of paprika
1/8 teaspoon of pepper
1 tsp of dried oregano
2 1/2-3 pounds of meaty chicken pieces (personally I use a breast)
2 tablespoons of butter/margarine
In a small bowl combine egg and milk. In a shallow dish combine crushed cracker, paprika, and pepper, and dried oregano. Set aside. Skin chicken if it isn't already. Dip chicken pieces, 1 at a time, into egg mixture; coat with crumb mixture.
In a greased 15x10x1 inch baking pan, arrange the chicken, bone side down, so the pieces aren't touching. Drizzle chicken with the melted butter.
Bake, uncovered, in a 375 degree oven for 45-55 minutes or until chicken is no longer pink (170 degrees for breasts; 180 degrees for thighs and drumsticks). Do not turn chicken pieces while baking.
